Oh my!! I could eat this all day, like seriously this could be a breakfast, lunch or dinner kind of a dish. It’s filling, you can put whatever takes your fancy on the top and it’s realllllly low carb, what could be better? After getting such fabulous feedback from my Cheesy puff rolls I wondered what else could be done with this ‘dough’ …. it produces a pizza come focaccia type dish which was finished in minutes when put to the test! Go wild with your toppings and enjoy.
Ingredients
- 100g ground almonds
- 50g grated parmesan
- 50g grated mozerella
- 50g grated cheddar
- 1 tsp baking powder
- 1tsp dried rosemary (or whichever herbs you’d like to add)
- 50g softened salted butter (or unsalted and add a pinch of salt)
- 1 medium egg
- 1 minced garlic clove
- Tomato paste
- Toppings of your choice, meat must be precooked
Method
- Preheat oven to 200c or 180c fan assisted and line a baking tray with non-stick paper
- In a large bowl combine all the cheeses, ground almonds and baking powder
- Add the garlic and butter and use a fork to combine until crumbly
- Add the egg and mix until well combined and a dough is formed
- Chill in the fridge for 20 mins
- Place between two sheets of baking paper and roll out until it’s about 0.5cm thick
- Peel off the top layer of baking paper and place the base on a flat oven tray
- Spread some tomato paste over the whole base and top with your toppings, push them in a little as the base will rise around your toppings
- Bake for 15-20 minutes, once cooked remove from the oven and leave to crisp up for around 5 minutes
- Slice and serve!
